Techniques Class – En Papillote

Come learn the secrets of en papillote — French for “in parchment.” This method of cooking involves putting food into a folded pouch made from parchment paper and then baking, a process that steams the food. Fish, vegetables, poultry and even desserts can be cooked en papillote.  Cooking en papillote is fun and opening one of these pouches is aromatherapy — a little cloud of steam and a burst of tantalizing smells!
