Essential Sauces (& How to Use Them)

According to the brilliant Alice Waters, there are four sauces that she uses over and over: Vinaigrette, Italian Salsa Verde, Aioli and Herb Butter.

In our class tonight we will make a Crisp Winter Greens Salad with Vinaigrette, Seared Salmon with Salsa Verde, Roasted Baby Vegetable with Aioli, and Pan-fried Pork Chops with Sage Herb Butter.
